It all begins among the rows of our olive trees, cultivated with sustainable methods and full respect for natural rhythms. We do not use shortcuts: each plant is followed throughout the year, pruned carefully and fed only what the earth offers.
When harvest time comes, the air is filled with excitement. The olives are harvested by hand, at the exact moment when they have reached the right ripeness, to ensure an oil rich in flavor, fragrance and beneficial properties. Pressing is done within a few hours of harvest, cold, to preserve every quality.
